From ancient glaciers to modern innovation

Founded in 2020 in New York’s Finger Lakes region, Six Eighty Cellars is a boutique winery crafting small-batch, earthenware-aged wines in unexpected styles. Our Certified Sustainable estate vineyard on the west side of Cayuga Lake serves as the foundation for our innovative approach, blending ancient and modern techniques to capture the purest expression of the grape. We are committed to sustainability and minimal intervention, ensuring each wine reflects our respect for the environment and unique terroir. We invite our community and wine enthusiasts everywhere to discover something new and exciting.

Cayuga Lake’s deep waters and steady breezes create a true cool-climate growing environment—much like Burgundy or the Loire Valley—extending the ripening season and preserving natural acidity. This balance is what defines Finger Lakes wines, and it’s central to our approach at Six Eighty Cellars.

The Robin’s Vines Estate includes over 65 acres across three properties—Six Eighty Cellars among them—all overlooking the western edge of Cayuga Lake.

We currently grow a diverse range of varietals across the estate, including Cabernet Sauvignon, Pinot Noir, Chardonnay, Cabernet Franc, Melody, Merlot, Gewürztraminer, Arandell, Riesling, Concord, Lemberger, Sauvignon Blanc, Grüner Veltliner, Pinot Meunier, Cayuga, Gamay, and Chenin Blanc.

Rising 680 feet from the bottom of the lake to the uppermost point of the vineyards, the panoramic view reflects our unfettered and adventurous vision for our winemaking process. This dramatic rise in elevation is integral to successful viticulture, providing prime growing conditions for our classic vinifera grapes.

Our hospitality is as distinct as our wines. We offer personalized, immersive tastings that encourage guests to explore beyond the standard experience. Certified Sustainable Vineyards

As of 2023, our vineyards are Certified Sustainable as recognized by the New York Sustainable Winegrowing Program and Certification. This recognition reflects our ongoing efforts to adopt sustainable practices, minimize environmental impacts, reduce economic risks, support our workers health and safety, and produce exceptional grapes. We are proud to be among the first vineyards in New York State to have achieved this certification.
