We age our wines in ancient-style earthenware vessels, allowing flavors, textures, and mouthfeel to emerge as pure, timeless, and unexpectedly new. Experience a winemaking approach 6,000 years in the making.
Tradition guides us but doesn’t confine us. We embrace natural expression and experimentation, working with classic vinifera grapes and lesser-known varieties, as well as bold co-ferments, to push boundaries and challenge convention.

We let the grapes speak for themselves. Using native yeast fermentation, minimal additives, and an unforced aging process, we preserve the unaltered expression of the grape, revealing its true character.
With ancient-style vessels made from terracotta, concrete, clay, and sandstone, we age our wines in a way that is both natural and intentional. This process transcends time, producing white, orange, and red wines that are not only wildly inventive but also a testament to history, craftsmanship, and the true essence of the grape.

Discover the ancient art of méthode ancestrale, the oldest technique for crafting natural sparkling wine, as you indulge in an immersive brunch tasting experience. Brunch is available on Saturdays and Sundays only, and reservations are required.
Two million years ago, the Finger Lakes were formed by receding glaciers, leaving deep, pristine lakes and steeply sloped hillsides, ideal for grape growing. Fast forward to 2020, when the property was purchased by local vineyardists Dave and Melissa Pittard. Attracted by the property’s well-established vines overlooking Cayuga Lake, Dave and Melissa saw the opportunity to create an exciting new style of wines rarely seen in the Finger Lakes region.

Yes! We offer a comfortable two-bedroom house on the Six Eighty Cellars property, perfect for up to four guests. With breathtaking views of Cayuga Lake and our vineyards, it’s an ideal retreat.
