At Six Eighty Cellars, winemaking is both an art and an evolution. We honor timeless methods while embracing the unexpected, crafting wines that are truly one-of-a-kind.

At Six Eighty Cellars, many of our winemaking vessels are a departure from the stainless steel and oak traditionally seen in our region. We are using old world, traditional style amphorae that enhance the natural characteristics of the grapes. From Italy we have imported a Terracotta Cigar, Cocciopesto Opus, five clay Clayvers and a concrete Tulip. Three Vin et Terre Sandstone vessels in jarre and egg form originated in France.

Terracotta

Highly porous and naturally insulating, terracotta supports cool, steady fermentations and gentle oxygen exchange. It enhances color in reds and encourages slow, balanced development.

Highly porous but more refined than terracotta, sandstone allows natural oxygen exchange suited to delicate, aromatic wines. Its uncoated surface encourages purity and slow development.

Moderately porous, concrete allows micro-oxygenation with more control than terracotta or sandstone. It preserves purity, adds texture, and maintains steady, cool fermentations thanks to natural insulation.

Cocciopesto

An ancient Roman material made from crushed brick, stone, and lime. Naturally breathable, uncoated, and food-safe, our Drunk Turtle vessels are ovoid, air-dried, and crafted from natural or upcycled materials to reduce carbon impact.

Clayver

Made from compact, ceramic-like stoneware, Clayver offers minimal oxygen exchange—ideal for preserving acidity and precision during long-term aging. Its impermeable surface retains freshness, while rotating stands allow gentle lees stirring when needed.

Experience varieties uncommon to the Finger Lakes region, including Pinot Meunier, Grüner Veltliner and Chenin Blanc, with planting of Gamay coming in the Spring of 2022. At Six Eighty Cellars, we also grow varieties more common to the region, but made in unexpected styles; enjoy Merlot in a Pétillant Naturel style, Riesling that was wild fermented in a French sandstone egg and semi-carbonic Cabernet Franc aged in Cocciopesto.
